Spiros Kannavos has the type of experience, dedication, and commitment to fine cuisine that makes legends in the hospitality business. In his 29 years of experience in the industry, he has done it all from owning and operating his own restaurant to working in luxurious venues for high-end clientele. From a young age, he has been committed to exceptional cuisine and comfortable fine-dining experiences that delight the senses and bring people together.
He began his career in 1985 as the owner and operator of Dick and Dora’s Restaurant established in 1933. His hands-on approach and attention to detail had him involved in everything from menu design and development and creation of catering packages to the training and education of the staff. He formed direct relationships within the Fulton Fish and Meat Market with quality purveyors that enabled him to hand pick items to showcase in the restaurant, establishing the restaurant’s reputation for high quality food in a comfortable setting.
After more than 20 years in business for himself, Kannavos was eager for a new challenge and the opportunity to learn from different chefs and experiences. He began work with Cornelia Guest Events as a Catering Chef, working with Executive Chef, Andrew Buffalino, in catering events for high-end clientele such as Estee Lauder, Jo Malone, Diane Von Furstenberg, as well as various charities like the Humane Society. In addition, he worked with the Babylon Carriage House and East End Café as Executive Chef.
Spiros brings a skillset like no other to Russo’s On The Bay. His specialty is utilizing a “made from scratch” approach to all cuisine while creating a diverse menu that accommodates diverse ethnicities and dietary needs. He is gifted at management in hospitality, understanding the nuances of aligning front and back of house strategies to create a streamlined, efficient process that delivers only the highest quality food. More importantly, however, is his ability to effectively manage teams to create leaders and exceptional chefs underneath his tutelage.
He has achieved multiple educational certificates and degrees including an Associate of Arts in Culinary Arts with High Honors and programs at the Culinary Institute of America. In addition, he has served as a Sous Chef for Chef Michael Flores James Beard House Dinner and is a member of the American Culinary Federation and Chefs de Cuisine Organization. In addition, Spiros is committed to charitable events, taking part in the Nutcracker Sweets Benefit for the Battered Woman’s Shelter for San Antonio as a Chef Member of their Collective Culinary Team featuring celebrity chefs like Rick Bayless & Susan Spicer.
